Brixx lawyer Joe S. Major III stated that “neither Brixx’s web site nor advertisement states a ‘wood fired oven.’ The oven does burn some wood to flavor the pizza.”

wood fired pizza ("best brick oven pizza around"), wood fired pita chips, wood roasted portabello, chicken, salmon, but no wood fired oven. Tricky. They're using wood as flavor instead of fuel. If it were my pizza place I would immediately brag very publicly about how my wood fired pizza process has all of the flavor of while being xx% better for the environment than Hard Knox Pizza's tree waster. However, I haven't had either pizza and for all I know the fake-fired way might have that gross liquid smoke taste.

When in doubt, buy local.

Sad, but I have tried and enjoyed very much Hard Knox pizza. I hope they don't have a big ol' carbon footprint. I didn't think about it or scrutinize their pizza cooking methodology. It tastes good and I understood they also make their own cheese that also tasted good. And they serve Woodruff draft beer! Not my favorite brews, but fresh and local and millions of times better than the standard and awful, large brand labels.

There are not many restaurants I really like, but this one made the cut. Hope the legal fluff disappears.
