One of our annual traditions has been to go to Pizza Palace for a pizza and a curbside Budweiser on the Friday after Thanksgiving as a sort of turkey antidote.

But we had so many leftovers, and they were so good, and we ate so much at two family Thanksgiving dinners that I guess we didn't have room left for pizza. Maybe next year.

Or maybe later this week. I think we had the final turkey dinner for a while last night, and the rest is in the freezer except for scraps that are going into turkey soup, turkey salad, turkey casserole, or turkey pot pie, not sure yet.

Anyway, what's your antidote for turkey overdose?

We're down to turkey soup.

We're down to turkey soup. To kill the taste of the bird, I fired up the smoker and slow cooked a big slab of salmon I had brined. And then we put our bellies in a sling and walked up the creek. The weather is too good to pass up a hike up the gorge between meals to help with the guilt trip over the vast quantities of food I consumed...Salmon wraps and salmon and eggs for the next few days should wipe out the turkey hangover.

Try ...

veggie lasagna...or go south-of-the-border with black bean and cheese burritos with habanero salsa and all the fixin's. Or...you could even take the left-over turkey...shred it...add a can of mushroom soup and some chopped green chilies (hot), stir it all together and pour over a layer of corn tortillas in a lasagna pan...cover with a layer of cheddar cheese and then a layer of corn tortillas, top with more cheddar cheese and bake in a 425 degree oven for 20 minutes or so until the cheese is melted and bubbly. Voila! Cheesy turkey enchiladas!
