A new study which was recently published in the British Medical Journal found no association between the frequency of fried food consumption in Spain and the incidence of heart disease.

In Spain they use olive oil and sunflower oil for frying. Another important component, they use fresh oil for frying. I guess we, in the U.S., can forget about it since restaurants here don't know from fresh oil for frying.

The article linked did not note how often these folks exercised (or perhaps I missed it while skimming). Of the people I know in France and Spain (among other European countries) they are also very active, ie., walking or biking to work.

I would imagine that is a large contributing factor.

Alton Brown has always

Alton Brown has always stressed the temperature of the frying oil too. Cooking in oil that is too cool causes the food to absorb more of the fat while dropping it into oil of adequate temperature seals the food preventing absorption.

Speaking of cardiac health, last night NBC Nightly News reported a study published in the Lancet that said blood pressure should be measured on both arms. If there is a significant difference in the systolic pressures, serious problems may be indicated. Here is more from the Times of India. They, in turn, have a link which appears to be for the Lancet study, but it actually targets another page at the Times.


A new Lancet study, published on Monday, says differences in systolic blood pressure between arms could be a useful indicator of the likelihood of vascular risk and death. The findings bolster support to the calls for both-arm blood pressure checks to be performed as standard.
